Hau'oli La Ho'omakika'i


That's Happy Thanksgiving in Hawaiian.

If you'd like to know how to pronounce it, try this:

Hope everyone has (or had) a wonderful day with family and friends, eating, sharing, and making wonderful memories.

Coconut Rice--Yum!

It's been a long time, but finally . . . 

Here's a recipe!!

This one is simple--so don't be afraid to try it.

Coconut Rice

Rice (I like Basmati brown rice, but white rice works well too)
1 Can Coconut Milk (I purchase it at an Asian market)
Water
A Can of Coconut Milk

I use a rice cooker, but you can prepare this however you're used to cooking rice.

Place rice in a rice cooker (1-4 cups as needed for your family.)

Add the can of coconut milk.

Add water to complete the amount of liquid needed to cook the number of cups. My rice cooker has lines to show how much liquid should be added, so I make sure to add enough water to match the appropriate line.

Cook and serve with a Curry Dish (chicken, beef or pork) or with Shoyu Chicken. Check out my recipe page to get the recipe for Shoyu Chicken!

Shoyu Chicken, Hawaiian Bread & Salad

Here's my complete dinner--Shoyu Chicken with coconut rice, a green salad and King's Hawaiian Sweet Bread (which you can get at any grocery store.)

Mario What???

On Monday I introduced Marcus Mariota, the University of Oregon's quarterback.

When the news hit that he was the starting quarterback, many reporters and announcers had trouble with his name. They finally figured out that if they said Mario (as in the Mario video games) and added a Ta at the end, they were pronouncing it correctly!

Here's my son's shirt that makes it very clear how to pronounce our amazing #8's last name!

We sure do love our Hawaiian quarterback!!

The Hawaii Connection

So, you faithful blog readers already know how much I love
The University of Oregon Ducks Football!


But, did you know about the Hawaii connection??

Marcus Mariota.
He's from Hawaii and he's been doing a terrific job for U of O football.
